Throw in some cherry tomatoes, zucchini or yellow squash for a rainbow of colour. Brighten up a chicken or turkey salad by adding big chunks of peaches or apricots to get those taste buds tingling. Greens go great with papaya or mango strips top with herb vinaigrette or fruit flavoured yoghurt dressing. Tuck favourite sandwich fillings into Italian Focaccia bread layer with strips of cheese and tomato slices, sprinkle with fresh herbs and drizzle with balsamic vinegar and olive oil.
How to cook the perfect oven roasted Mediterranean vegetable focaccia This light, elegant dish provides a welcome change to the usual picnic fare Best of all, it can be made a day ahead. Ingredients 3 tbsp balsamic or red wine vinegar 2 tsp olive oil 25 gm fresh, chopped basil 25 gm fresh chopped coriander 1 Aubergine sliced into thin rounds 1 courgette sliced thinly 1 yellow squash, sliced thinly 1 red pepper, sliced thinly 1 small red onion, sliced thinly 1 bunch of asparagus, cleaned & trimmed Yoghurt dressing 6 tbsp plain yoghurt 2 tbsp mayonnaise 1 tbsp fresh, chopped basil 1 tsp lemon juice Directions: 1. Preheat oven to 180c. Mix together the vinegar, oil, coriander and basil in a large bowl Add vegetables to the bowl and coat with the mixture 2. Place vegetables in roasting tray and cook, stirring occasionally until tender, about 30 minutes. 3. Whisk together ingredients for yoghurt dressing 4. Spread yoghurt mixture on pita halves, crusty rolls or Focaccia bread. Top with the roasted vegetables and enjoy You might also be interested in some strawberries to compliment which are perfect around Wimbledon time. You can buy them from the supermarket or go strawberry picking which is fun for all ages. If you do manage to get your strawberries home without eating them all, make room for them in the refrigerator. If they did not come in a ventilated container with a plastic lid, place them in a bowl, cover with plastic wrap, and poke several holes in the plastic. This storage method is intended to allow the berries to breathe, but also prevent them from losing too much moisture. Strawberries will decay much more quickly after they've been washed, so hold off until you are ready to use them.
